I popped down to the kitchen to peep what they were prepping for Saturday’s Noisette Event. Chef Ryan Pollnow will be serving up deliciousness in the form of Carta di Musica with Rabbit & Peach Mostarda.
I had no clue what carta di musica was until Michelle, our resident bread expert explained.
Made using just flour + water, the carta di musica is a paper thin pocket of dough that is baked in our wood fired oven for a few minutes. It fills up with air and the end result is the most delicate and utterly delicious pitta type pocket I’ve come across.
